This week Emma has prepared two recipes for you and your families to make at home.

 

Oatmeal Bites: Two Ways

Banana chocolate 

Ingredients: 

  • 1 ripe banana
  • 1 cup of oats
  • 1/2 cup chocolate chips
  • 1 tablespoon of honey

Preparation:

  1. Mash banana.
  2. Combine all ingredients, cover with plastic wrap and let sit in the fridge for 1 hour.
  3. Using a spoon or ice cream scoop, scoop equal amounts of mixture and form into balls.

 

Sunbutter Chocolate 

Ingredients:

  • 1/2 cup Sunbutter
  • 1 cup oats
  • 1/4 cup of honey
  • 1/4 cup chocolate chips
  • 1/2 cup of coconut flakes

Preparation:

  1. Combine all ingredients in a bowl.
  2. Cover with plastic wrap and let sit for 1 hour in the fridge.
  3. Using a spoon or ice cream scoop, scoop equal amounts of mixture and form into balls.

 

The Oatmeal bites can be eaten right away, sit sealed in the fridge for up to 1 week, or in the freezer to save for later.

If you do not have all of these ingredients readily available to you here are some substitutions:

  • 1 rip banana sub with 1/4-1/2 cup of apple sauce
  • Chocolate chips with blueberries
  • Honey with agave, or any other liquid sweetener,
  • Sunbutter with nut butter of your choice
  • Coconut flakes with more oats
